1 cup butter, softened
1 cup granulated sugar
1 cup brown sugar, packed
2 large eggs
2 teaspoons vanilla extract
3 cups all-purpose flour
1 teaspoon baking soda
½ teaspoon salt
2 teaspoons ground cinnamon
½ teaspoon ground nutmeg
1 cup apple cider
8 ounces cream cheese, softened
½ cup powdered sugar
Instructions
Preheat your oven to 350°F (175°C).
In a large bowl, cream together the butter, granulated sugar, and brown sugar until smooth.
Beat in the eggs one at a time, then stir in the vanilla.
In another bowl, whisk together the flour, baking soda, salt, cinnamon, and nutmeg.
Gradually add the dry ingredients to the wet ingredients, mixing well.
Stir in the apple cider until just combined.
Drop by spoonfuls onto ungreased baking sheets.
Bake for 12-15 minutes, or until golden.
To make the filling, beat the cream cheese and powdered sugar until smooth. Once cookies are cool, spread cream cheese filling on half of the cookies and sandwich with the other half.
Notes
For extra flavor, consider adding chopped apples or walnuts to the batter.
