  • 1 ½ cups gluten-free all-purpose flour
  • 1 cup sugar
  • ½ cup unsalted butter, softened
  • 2 large eggs
  • 1 teaspoon baking soda
  • 1 teaspoon baking powder
  • ½ teaspoon salt
  • 1 teaspoon cinnamon
  • ½ teaspoon nutmeg
  • ½ teaspoon allspice

Instructions

  1. Preheat oven to 350°F (175°C) and line a cupcake pan with liners.
  2. In a saucepan, boil apple cider until reduced by half, about 10 minutes.
  3. In a bowl, cream together butter and sugar until light and fluffy.
  4. Add eggs one at a time, mixing well after each addition.
  5. Mix in the reduced apple cider.
  6. In another bowl, whisk together the dry ingredients.
  7. Gradually add dry ingredients to wet ingredients, mixing until combined.
  8. Fill the cupcake liners about 2/3 full and bake for 18-20 minutes.
  9. Let cool completely before frosting.

Notes

  • For a vegan version, substitute eggs with flax eggs and butter with coconut oil.
  • Store leftovers in an airtight container.
