  • 2 cups diced apples
  • ¾ cup brown sugar
  • ½ cup rolled oats
  • 1 teaspoon vanilla extract

Instructions

  1. Preheat the oven to 350°F (175°C) and line a muffin tin with paper liners.
  2. In a large bowl, mix the flour, sugar, baking powder, salt, and cinnamon.
  3. In another bowl, combine the melted butter, egg, milk, and vanilla extract.
  4. Pour the wet ingredients into the dry ingredients and mix until just combined.
  5. Fold in the diced apples.
  6. In a small bowl, mix brown sugar, rolled oats, and a little butter for topping.
  7. Spoon muffin batter into the lined muffin tin, filling each cup about 2/3 full.
  8. Sprinkle the topping mixture over each muffin.
  9. Bake for 20-25 minutes or until a toothpick comes out clean.
  10. Let them cool for 5 minutes before transferring to a wire rack.
