  • 1 pound chicken thighs
  • 4 cups chicken broth
  • 1 cup cheddar cheese, shredded
  • 1 onion, chopped
  • 2 cloves garlic, minced
  • 1 teaspoon paprika
  • 1 teaspoon cumin
  • Salt to taste
  • Black pepper to taste
  • 2 tablespoons olive oil

Instructions

  1. Heat olive oil in a large pot over medium heat.
  2. Add chopped onion and minced garlic, and sauté until softened.
  3. Add chicken thighs and brown them on both sides.
  4. Stir in rice, chicken broth, paprika, cumin, salt, and pepper.
  5. Bring to a boil, then reduce heat to low and cover.
