- 1 cup Arborio rice
- 4 cups vegetable broth
- 1 tablespoon olive oil
- 1 onion, chopped
- 2 cloves garlic, minced
- 1 pound asparagus, trimmed and cut into pieces
- 2/3 cup Parmesan cheese, grated
- salt to taste
- pepper to taste
- In a saucepan, heat the vegetable broth over low heat.
- In a large pan, heat the olive oil and sauté the onion and garlic until translucent.
- Add the Arborio rice and stir for a couple of minutes until lightly toasted.
- Gradually add the warm vegetable broth one ladle at a time, stirring frequently.
- When the rice is almost done, add the asparagus and continue to cook.
- Once the rice is creamy and tender, stir in the Parmesan cheese. Season with salt and pepper.
- Serve hot and enjoy!
