Asparagus Risotto

Learn how to make a delicious asparagus risotto that’s perfect for any dinner.

Ingredients

  • 1 cup Arborio rice
  • 4 cups vegetable broth
  • 1 tablespoon olive oil
  • 1 onion, chopped
  • 2 cloves garlic, minced
  • 1 pound asparagus, trimmed and cut into pieces
  • 2/3 cup Parmesan cheese, grated
  • salt to taste
  • pepper to taste

Instructions

  1. In a saucepan, heat the vegetable broth over low heat.
  2. In a large pan, heat the olive oil and sauté the onion and garlic until translucent.
  3. Add the Arborio rice and stir for a couple of minutes until lightly toasted.
  4. Gradually add the warm vegetable broth one ladle at a time, stirring frequently.
  5. When the rice is almost done, add the asparagus and continue to cook.
  6. Once the rice is creamy and tender, stir in the Parmesan cheese. Season with salt and pepper.
  7. Serve hot and enjoy!
