Baked Chili Rellenos Recipe

A delicious and easy recipe for baked chili rellenos featuring turkey bacon.

  • 4 large poblano peppers
  • 1 cup shredded cheese
  • 6 ounces turkey bacon
  • 1 cup diced tomatoes
  • 1 onion, chopped
  • 2 cloves garlic, minced
  • 1 teaspoon cumin
  • 1 teaspoon chili powder
  • 1/2 teaspoon salt
  • 1/2 teaspoon black pepper

Instructions

  1. Preheat the oven to 375°F (190°C).
  2. Roast the poblano peppers until the skin is charred and remove the skin.
  3. In a skillet, cook turkey bacon until crispy, then chop.
  4. In the same skillet, sauté onions and garlic until translucent.
  5. Add tomatoes, cumin, chili powder, salt, and pepper to the skillet and stir well.
  6. Stuff the roasted peppers with the mixture and top with shredded cheese.
  7. Bake in the preheated oven for 20-25 minutes or until the cheese is melted and bubbly.

Notes

  • For a spicier dish, choose hotter chili peppers.
