Bakery-Style Pistachio Muffins (No Pudding Mix)

Delicious and moist bakery-style pistachio muffins that you can easily make at home without using any pudding mix.

  • 1 cup shelled pistachios
  • 2 cups all-purpose flour
  • 1 cup granulated sugar
  • 1 tablespoon baking powder
  • 1/2 teaspoon salt
  • 1/2 cup unsalted butter, melted
  • 1 cup milk
  • 2 large eggs
  • 1 teaspoon vanilla extract

Instructions

  1. Preheat your oven to 350°F (175°C) and line a muffin tin with paper liners.
  2. In a bowl, mix together the flour, sugar, baking powder, and salt.
  3. In another bowl, combine the melted butter, milk, eggs, and vanilla extract.
  4. Pour the wet ingredients into the dry ingredients and stir until just combined. Fold in the pistachios.
  5. Divide the batter evenly among the muffin cups and sprinkle with additional pistachios on top.
  6. Bake for 18-20 minutes or until a toothpick inserted in the center comes out clean.
  7. Allow to cool before serving.

Notes

  • For extra flavor, try adding some almond extract.
  • These muffins can be enjoyed warm or at room temperature.
