Beef and Bean Burritos Smothered with Red Chile Chimayo

Delicious Beef and Bean Burritos smothered in rich Red Chile Chimayo sauce, a perfect balance of flavors for a hearty meal.

Ingredients

  • 1 pound ground beef
  • 1 can black beans, rinsed and drained
  • 1 cup shredded cheese
  • 4 large flour tortillas
  • 1 cup red chile Chimayo sauce
  • 1 teaspoon garlic powder
  • 1 teaspoon cumin
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper

Instructions

  1. In a skillet, brown the ground beef over medium heat. Drain excess fat.
  2. Add black beans, cheese, garlic powder, cumin, salt, and pepper to the beef. Stir until cheese is melted.
  3. Warm tortillas in a separate pan.
  4. Fill each tortilla with the beef mixture and roll tightly.
  5. Place rolled burritos in a baking dish and smother with red chile Chimayo sauce.
  6. Bake in a preheated oven at 350°F for 20 minutes.

Notes

  • For extra flavor, add chopped onions and peppers to the beef mixture.
  • These burritos can be made ahead of time and frozen.
