- 1 pound ground beef
- 1 cup long-grain white rice
- 1 can (10 ounces) Rotel tomatoes with green chilies
- 2 cups beef broth
- 1 cup shredded cheese
- 1 teaspoon taco seasoning
- 1 tablespoon olive oil
- 1 bell pepper, diced
- 1 onion, diced
- In a large skillet, heat the olive oil over medium heat. Add the onions and bell pepper, sauté until soft.
- Add the ground beef and taco seasoning, cooking until the beef is browned.
- Stir in the rice, then add the Rotel tomatoes and beef broth.
