  • 1 tablespoon olive oil
  • 1 onion, chopped
  • 2 cloves garlic, minced
  • 1 teaspoon ground cumin
  • 1 teaspoon dried oregano
  • 4 cups chicken broth
  • 2 medium potatoes, diced
  • 1 cup carrots, diced
  • 1 bell pepper, chopped
  • 2 cups cooked chicken, shredded
  • 1 cup cilantro, chopped
  • 1 lime, juiced

Instructions

  1. Heat olive oil in a large pot over medium heat. Add onions and garlic, cooking until soft.
  2. Stir in cumin and oregano, cooking for an additional minute.
  3. Add chicken broth, potatoes, carrots, and bell pepper. Bring to a boil and then reduce heat to simmer.
  4. Cook until vegetables are tender, about 15 minutes.
  5. Add the shredded chicken, cilantro, and lime juice. Cook for another 5 minutes.
  6. Serve hot and enjoy your Aguadito de Pollo.

Notes

  • For extra flavor, add some diced jalapeños for heat.
