Best Lentil Soup

A delightful and hearty lentil soup that combines the rich flavors of turkey bacon and chicken ham.

Ingredients

  • 1 cup dried lentils
  • 2 slices turkey bacon
  • 1 cup diced chicken ham
  • 1 onion, chopped
  • 2 carrots, diced
  • 2 celery stalks, diced
  • 4 cups vegetable broth
  • 2 cloves garlic, minced
  • 1 teaspoon cumin
  • 1 teaspoon thyme
  • Salt to taste
  • Black pepper to taste

Instructions

  1. In a large pot, cook the turkey bacon over medium heat until crispy. Remove and set aside.
  2. Add the onion, carrots, and celery to the pot. Sauté until softened.
  3. Add the garlic, cumin, and thyme. Cook for 1 minute.
  4. Add the lentils, vegetable broth, and diced chicken ham. Bring to a boil.
  5. Reduce heat and simmer for 30 minutes or until lentils are tender.
  6. Season with salt and black pepper. Serve hot, garnished with crispy turkey bacon.

Notes

  • For added flavor, you can sauté the vegetables in the bacon fat.
  • Leftover soup can be stored in the fridge for up to 3 days.
