- 1 cup dried lentils
- 2 slices turkey bacon
- 1 cup diced chicken ham
- 1 onion, chopped
- 2 carrots, diced
- 2 celery stalks, diced
- 4 cups vegetable broth
- 2 cloves garlic, minced
- 1 teaspoon cumin
- 1 teaspoon thyme
- Salt to taste
- Black pepper to taste
- In a large pot, cook the turkey bacon over medium heat until crispy. Remove and set aside.
- Add the onion, carrots, and celery to the pot. Sauté until softened.
- Add the garlic, cumin, and thyme. Cook for 1 minute.
- Add the lentils, vegetable broth, and diced chicken ham. Bring to a boil.
- Reduce heat and simmer for 30 minutes or until lentils are tender.
- Season with salt and black pepper. Serve hot, garnished with crispy turkey bacon.
