  • 1/2 cup cream cheese, softened
  • 1 cup blueberries, fresh
  • 1/2 cup milk
  • 1/3 cup vegetable oil
  • 2 large eggs
  • 2 tsp baking powder
  • 1/2 tsp salt

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. In a bowl, mix the flour, sugar, baking powder, and salt.
  3. In another bowl, combine the cream cheese, milk, oil, and eggs. Mix until smooth.
  4. Combine the wet and dry ingredients, then gently fold in the blueberries.
  5. Fill muffin cups and bake for 20-25 minutes or until golden brown.
  6. Let cool before serving.

Notes

  • For extra flavor, add a splash of vanilla extract to the wet ingredients.
  • These muffins can also be made with frozen blueberries.
