Ingredients

  • 8 tortillas
  • 2 cups shredded cheese
  • 1 cup cooked breakfast sausage
  • 4 eggs
  • 1/2 cup milk
  • 1 teaspoon salt
  • 1/2 teaspoon pepper
  • 1/2 cup salsa

Instructions

  1. Preheat the oven to 350°F (175°C).
  2. In a bowl, whisk together eggs, milk, salt, and pepper.
  3. In a skillet, cook the sausage until browned.
  4. Fill each tortilla with sausage and cheese, then roll them up.
  5. Place the rolled tortillas in a baking dish and pour the egg mixture on top.
