- 1 cup granulated sugar
- 1 cup brown sugar
- 4 large eggs
- 2 teaspoons vanilla extract
- 2 cups all-purpose flour
- 1 cup cocoa powder
- 1 teaspoon baking powder
- 1/2 teaspoon salt
- 2 cups chocolate chips
- 1 cup cookie dough (store-bought or homemade)
- Preheat your oven to 350°F (175°C) and line baking sheets with parchment paper.
- In a large bowl, cream together the butter, granulated sugar, and brown sugar until light and fluffy.
- Add the eggs, one at a time, mixing well after each addition. Stir in the vanilla extract.
- In another bowl, whisk together the flour, cocoa powder, baking powder, and salt.
- Gradually add the dry ingredients to the wet ingredients, mixing until just combined. Fold in the chocolate chips.
- Drop tablespoon-sized amounts of cookie dough onto the prepared baking sheets.
- Bake for 10-12 minutes until the edges are set but the centers remain soft.
- Remove from the oven and allow to cool for a few minutes before transferring to a wire rack to cool completely.
- Once cookies are cool, spread a layer of cookie dough on the bottom of one cookie and top with another cookie to form a sandwich.
