  • 2 cups cooked pasta
  • 1 pound chicken breasts
  • 1 cup cherry tomatoes, halved
  • 1/4 cup fresh basil, chopped
  • 2 cloves garlic, minced
  • 1 tablespoon olive oil
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1/4 cup balsamic vinegar
  • 1/2 cup mozzarella cheese, shredded

Instructions

  1. Cook the pasta according to package instructions. Drain and set aside.
  2. In a skillet, heat olive oil over medium heat. Season chicken with salt and pepper and cook until golden and cooked through.
  3. Add garlic and tomatoes to the skillet, cooking until tomatoes soften.
  4. Stir in cooked pasta, basil, and balsamic vinegar, mixing well.
  5. Top with mozzarella cheese and cover until melted.

Notes

  • For added flavor, marinate the chicken in balsamic vinegar for at least 30 minutes before cooking.
  • Swap mozzarella with feta for a different taste.
