Cajun White Chicken Chili

A delicious and comforting recipe that combines the flavors of Cajun cuisine with tender chicken and creamy white beans.

  • 1 pound boneless, skinless chicken breasts
  • 2 tablespoons olive oil
  • 1 medium onion, chopped
  • 3 cloves garlic, minced
  • 1 can diced green chilies
  • 2 teaspoons Cajun seasoning
  • 1 can white beans, drained and rinsed
  • 4 cups chicken broth
  • 1 cup corn, frozen or canned
  • 1/2 cup heavy cream
  • Salt and pepper to taste

Instructions

  1. In a large pot, heat olive oil over medium heat. Add onion and garlic, sauté until softened.
  2. Add chicken breasts and cook until browned on both sides.
  3. Stir in green chilies and Cajun seasoning, cooking for an additional minute.
  4. Pour in chicken broth and bring to a boil. Reduce heat and simmer for 20 minutes.
  5. Remove chicken, shred it, and return to the pot.
  6. Add white beans and corn, simmer for another 10 minutes.
  7. Stir in heavy cream, season with salt and pepper, and warm through before serving.

Notes

  • Serve with crusty bread or over rice.
  • Adjust the spiciness by adding more or less Cajun seasoning.
