  • 1 cup vegetable oil
  • 4 large eggs
  • 2 cups grated carrots
  • 1 cup crushed pineapple, drained

Instructions

  1. Preheat the oven to 350°F (175°C) and grease a 9×13 inch baking pan.
  2. In a large bowl, whisk together flour, baking powder, baking soda, cinnamon, and salt.
  3. In another bowl, mix granulated sugar, brown sugar, and vegetable oil until smooth. Add eggs one at a time, mixing well after each addition.
  4. Stir in grated carrots, crushed pineapple, and vanilla extract.
  5. Gradually add the dry ingredients to the wet ingredients, mixing until just combined.
  6. Pour the batter into the prepared baking pan and spread it evenly.
  7. Bake for 30-35 minutes or until a toothpick comes out clean.
  8. Let cool before frosting with cream cheese frosting.
