  • 1/4 teaspoon salt
  • 1/2 cup unsalted butter, softened
  • 1 cup brown sugar, packed
  • 1 large egg
  • 1 teaspoon vanilla extract
  • 1 cup grated carrots
  • 1/2 cup chopped walnuts
  • 1/2 cup raisins

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. In a bowl, mix together flour, baking soda, cinnamon, nutmeg, and salt.
  3. In another bowl, cream together butter and brown sugar until smooth.
  4. Add egg and vanilla extract to the butter mixture and mix well.
  5. Gradually add the dry ingredients to the wet ingredients.
  6. Fold in grated carrots, walnuts, and raisins.
  7. Drop by spoonfuls onto a baking sheet lined with parchment paper.
  8. Bake for 12-15 minutes or until the edges are lightly browned.
  9. Let cool on a wire rack.

Notes

  • For extra flavor, add a pinch of ginger.
  • These cookies can be frosted with cream cheese frosting for added sweetness.
