Instructions

  1. Preheat the oven to 350°F (175°C) and grease a baking pan.
  2. In a bowl, whisk together flour, baking powder, baking soda, cinnamon, and salt.
  3. In another bowl, mix granulated sugar, brown sugar, and oil until well combined. Add eggs one at a time followed by vanilla.
  4. Gradually add the dry ingredients to the wet mixture until just combined.
  5. Fold in grated carrots.
  6. Pour the batter into the prepared baking pan and smooth out the top.
  7. Bake for 25-30 minutes or until a toothpick comes out clean.
