Instructions

  1. Preheat your oven to 350°F (175°C) and line a muffin tin with paper liners.
  2. In a bowl, whisk together the flour, baking powder, baking soda, cinnamon, and salt.
  3. In another bowl, mix the granulated sugar, brown sugar, vegetable oil, and eggs until well combined.
  4. Gradually add the dry ingredients to the wet ingredients and mix until just combined.
  5. Fold in the grated carrots, crushed pineapple, walnuts, and vanilla extract.
  6. Divide the batter evenly into the muffin tin and bake for 20-25 minutes or until a toothpick comes out clean.
  7. Allow to cool before serving.

Notes
