  • 1 cup turkey bacon, chopped
  • 1 medium onion, chopped
  • 4 cups chicken broth
  • 1 cup heavy cream
  • 2 tablespoons olive oil
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1 tablespoon fresh thyme, chopped

Instructions

  1. In a large pot, heat olive oil over medium heat. Add chopped onion and turkey bacon. Cook until the onion is translucent and the bacon is crisp.
  2. Add diced carrots and potatoes to the pot. Stir and cook for about 5 minutes.
