Cauliflower Cheese Muffins

Delicious and easy to make, these Cauliflower Cheese Muffins are a perfect comfort food with a delightful twist.

Ingredients

  • 1 cup cauliflower florets
  • 1 cup shredded cheese (cheddar or your choice)
  • 2 large eggs
  • 1/2 cup almond flour
  • 1 tsp baking powder
  • 1/2 tsp salt

Instructions

  1. Preheat the oven to 350°F (175°C) and grease a muffin tin.
  2. Steam the cauliflower florets until tender, then chop them finely.
  3. In a mixing bowl, combine the chopped cauliflower, shredded cheese, eggs, almond flour, baking powder, and salt.
  4. Mix until well combined, then spoon the mixture into the prepared muffin tin.
  5. Bake for 20-25 minutes, or until golden brown on top.
  6. Allow to cool slightly before removing from the tin.
