- 4 large russet potatoes
- 1 pound flank steak
- 4 ounces turkey bacon
- 1 cup shredded cheddar cheese
- 4 tablespoons butter
- 4 cloves garlic, minced
- 2 tablespoons fresh parsley, chopped
- Salt and pepper to taste
- Preheat your oven to 400°F (200°C).
- Wash the russet potatoes and poke holes in them with a fork. Bake in the oven for about 45 minutes to 1 hour until tender.
- While the potatoes are baking, cook the turkey bacon in a skillet until crispy. Remove and chop into small pieces.
- In the same skillet, cook the flank steak to your desired doneness. Let it rest, then slice it thinly.
- In a small saucepan, melt the butter and add minced garlic. Cook for about 1 minute until fragrant.
- Once the potatoes are done, cut them in half and scoop out some of the insides to create a boat.
- Mix the potato insides with the sliced steak, chopped bacon, garlic butter, and cheddar cheese. Refill the potato skins with this mixture.
- Top with additional cheese if desired and return to the oven for another 10-15 minutes until cheese is melted and bubbly.
- Garnish with fresh parsley before serving.
