Cheesy Garlic Butter Steak and Turkey Bacon Stuffed Potatoes

  • 4 large russet potatoes
  • 1 pound flank steak
  • 4 ounces turkey bacon
  • 1 cup shredded cheddar cheese
  • 4 tablespoons butter
  • 4 cloves garlic, minced
  • 2 tablespoons fresh parsley, chopped
  • Salt and pepper to taste

Instructions

  1. Preheat your oven to 400°F (200°C).
  2. Wash the russet potatoes and poke holes in them with a fork. Bake in the oven for about 45 minutes to 1 hour until tender.
  3. While the potatoes are baking, cook the turkey bacon in a skillet until crispy. Remove and chop into small pieces.
  4. In the same skillet, cook the flank steak to your desired doneness. Let it rest, then slice it thinly.
  5. In a small saucepan, melt the butter and add minced garlic. Cook for about 1 minute until fragrant.
  6. Once the potatoes are done, cut them in half and scoop out some of the insides to create a boat.
  7. Mix the potato insides with the sliced steak, chopped bacon, garlic butter, and cheddar cheese. Refill the potato skins with this mixture.
  8. Top with additional cheese if desired and return to the oven for another 10-15 minutes until cheese is melted and bubbly.
  9. Garnish with fresh parsley before serving.

Notes

  • For extra flavor, you can add different types of cheese or spices.
  • Feel free to substitute the steak with chicken or another protein.
