- 1 pound chicken thighs, boneless and skinless
- 1 cup bell peppers, diced
- 1 cup onions, chopped
- 2 cloves garlic, minced
- 1 can (14.5 ounces) diced tomatoes
- 1 teaspoon dried oregano
- 1 teaspoon dried basil
- 1/2 teaspoon black pepper
- 1/2 cup mozzarella cheese, shredded
- 2 cups cooked pasta
- Preheat the oven to 375°F (190°C).
- In a large skillet, brown the chicken thighs over medium heat for about 5-7 minutes.
- Add the bell peppers, onions, and garlic, and sauté until the vegetables are tender.
- Stir in the diced tomatoes, oregano, basil, and black pepper; let simmer for 5 minutes.
- In a large bowl, combine the cooked pasta and chicken mixture, then transfer to a greased casserole dish.
