  • 1 pound chicken thighs, boneless and skinless
  • 1 cup bell peppers, diced
  • 1 cup onions, chopped
  • 2 cloves garlic, minced
  • 1 can (14.5 ounces) diced tomatoes
  • 1 teaspoon dried oregano
  • 1 teaspoon dried basil
  • 1/2 teaspoon black pepper
  • 1/2 cup mozzarella cheese, shredded
  • 2 cups cooked pasta

Instructions

  1. Preheat the oven to 375°F (190°C).
  2. In a large skillet, brown the chicken thighs over medium heat for about 5-7 minutes.
  3. Add the bell peppers, onions, and garlic, and sauté until the vegetables are tender.
  4. Stir in the diced tomatoes, oregano, basil, and black pepper; let simmer for 5 minutes.
  5. In a large bowl, combine the cooked pasta and chicken mixture, then transfer to a greased casserole dish.
  6. Top with mozzarella cheese and cover with foil.
  7. Bake for 25 minutes, then remove the foil and bake for another 10 minutes until cheese is bubbly.
  8. Let it cool for a few minutes before serving.
