Chicken Poblano and Black Bean Soup

A delicious and hearty soup combining chicken, black beans, and the smoky flavors of poblano peppers.

Ingredients

  • 1 pound chicken breast, cooked and shredded
  • 2 cups black beans, canned or cooked
  • 2 poblano peppers, diced
  • 1 onion, chopped
  • 3 cloves garlic, minced
  • 4 cups chicken broth
  • 1 teaspoon cumin
  • 1 teaspoon chili powder
  • Salt and pepper to taste
  • 4 slices turkey bacon, cooked and crumbled

Instructions

  1. In a large pot, sauté the onion, garlic, and poblano peppers until soft.
  2. Add the cooked chicken, black beans, chicken broth, cumin, chili powder, salt, and pepper.
  3. Bring to a boil, then reduce heat and let simmer for 20 minutes.
  4. Top with crumbled turkey bacon before serving.
