  • 1 medium onion, diced
  • 2 carrots, sliced
  • 2 celery stalks, diced
  • 4 cups chicken broth
  • 2 cups diced potatoes
  • 1 cup frozen peas
  • 1 teaspoon thyme
  • 2 cups heavy cream
  • 1/4 cup all-purpose flour
  • Salt and pepper to taste

Instructions

  1. In a large pot, cook turkey bacon until crispy. Remove and crumble.
  2. Sauté onions, carrots, and celery in the bacon drippings until tender.
  3. Add chicken broth and potatoes; bring to a boil.
  4. Reduce heat and simmer for 15 minutes.
  5. Stir in crumbled bacon, peas, and thyme.
