Chicken Quesadilla

  • 2 cups cooked, shredded chicken
  • 1 cup shredded cheese (cheddar or Mexican blend)
  • 4 large flour tortillas
  • 1 tablespoon olive oil
  • 1/2 teaspoon garlic powder
  • 1/2 teaspoon onion powder
  • 1/2 teaspoon cumin
  • 1/4 teaspoon salt
  • 1/4 teaspoon pepper

Instructions

  1. In a bowl, mix the shredded chicken with garlic powder, onion powder, cumin, salt, and pepper.
  2. Heat olive oil in a skillet over medium heat.
  3. Place a tortilla in the skillet, and spread half of the cheese on one half.
  4. Add half of the chicken mixture on top of the cheese.
  5. Fold the tortilla in half and cook until the bottom is golden brown, then flip to cook the other side.
  6. Remove from skillet and repeat with remaining tortillas and filling.
  7. Cut quesadillas into wedges and serve hot.

Notes

  • For added flavor, consider adding sautéed bell peppers or onions.
  • These quesadillas can be stored in the fridge and reheated as needed.
