- 2 cups cooked, shredded chicken
- 1 cup shredded cheese (cheddar or Mexican blend)
- 4 large flour tortillas
- 1 tablespoon olive oil
- 1/2 teaspoon garlic powder
- 1/2 teaspoon onion powder
- 1/2 teaspoon cumin
- 1/4 teaspoon salt
- 1/4 teaspoon pepper
- In a bowl, mix the shredded chicken with garlic powder, onion powder, cumin, salt, and pepper.
- Heat olive oil in a skillet over medium heat.
- Place a tortilla in the skillet, and spread half of the cheese on one half.
- Add half of the chicken mixture on top of the cheese.
- Fold the tortilla in half and cook until the bottom is golden brown, then flip to cook the other side.
- Remove from skillet and repeat with remaining tortillas and filling.
- Cut quesadillas into wedges and serve hot.
