  • 2 pounds chicken thighs
  • 2 tablespoons shawarma spice mix
  • 4 cloves garlic, minced
  • 1/4 cup yogurt
  • 2 tablespoons olive oil
  • 1 lemon, juiced
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 2 cups basmati rice
  • 4 cups chicken broth
  • 1 lemon, zested
  • 1 tablespoon fresh parsley, chopped

Instructions

  1. In a bowl, combine chicken thighs with shawarma spice mix, garlic, yogurt, olive oil, lemon juice, salt, and pepper. Marinate for at least 1 hour or overnight.
  2. Preheat your grill or oven to medium-high heat. Cook marinated chicken until fully cooked and juices run clear, about 5-7 minutes per side.
  3. While chicken is cooking, rinse the basmati rice under cold water until the water runs clear.
  4. In a pot, bring chicken broth to a boil, add the rinsed rice, lemon zest, and cook for about 15 minutes or until rice is tender.
  5. Fluff the rice with a fork and stir in chopped parsley.
  6. Once chicken is cooked, slice and serve over the lemon rice.

Notes
