- 2 pounds chicken thighs
- 2 tablespoons shawarma spice mix
- 4 cloves garlic, minced
- 1/4 cup yogurt
- 2 tablespoons olive oil
- 1 lemon, juiced
- 1 teaspoon salt
- 1/2 teaspoon black pepper
- 2 cups basmati rice
- 4 cups chicken broth
- 1 lemon, zested
- 1 tablespoon fresh parsley, chopped
- In a bowl, combine chicken thighs with shawarma spice mix, garlic, yogurt, olive oil, lemon juice, salt, and pepper. Marinate for at least 1 hour or overnight.
- Preheat your grill or oven to medium-high heat. Cook marinated chicken until fully cooked and juices run clear, about 5-7 minutes per side.
- While chicken is cooking, rinse the basmati rice under cold water until the water runs clear.
- In a pot, bring chicken broth to a boil, add the rinsed rice, lemon zest, and cook for about 15 minutes or until rice is tender.
- Fluff the rice with a fork and stir in chopped parsley.
- Once chicken is cooked, slice and serve over the lemon rice.
