Chicken Spinach Alfredo

  • 2 cups fresh spinach
  • 1 cup heavy cream
  • 1 cup Parmesan cheese, grated
  • 3 cloves garlic, minced
  • 8 ounces fettuccine pasta
  • 2 tablespoons olive oil
  • Salt to taste
  • Black pepper to taste

Instructions

  1. Cook the fettuccine according to package instructions, then drain and set aside.
  2. In a large skillet, heat the olive oil over medium heat. Add the chicken breast and cook until golden and cooked through, about 6-7 minutes per side.
  3. Remove the chicken from the skillet, let it rest for a few minutes, then slice it thinly.
  4. In the same skillet, add the minced garlic and sauté until fragrant.
  5. Pour in the heavy cream, stirring to combine, then add the grated Parmesan cheese, salt, and black pepper.
  6. Add the fresh spinach and cook until wilted.
