  • 1 pound turkey bacon
  • 1 cup shredded cheddar cheese
  • 1 cup shredded Monterey Jack cheese
  • 6 large eggs
  • 1 cup milk
  • 1 teaspoon garlic powder
  • 1 teaspoon ground cumin
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper

Instructions

  1. Preheat the oven to 375°F (190°C).
  2. Roast the poblano peppers until charred, then peel and chop.
  3. Cook the turkey bacon in a skillet until crispy, then crumble.
  4. In a bowl, whisk together the eggs, milk, garlic powder, cumin, salt, and pepper.
  5. Layer the roasted peppers and crumbled bacon in a greased baking dish.
  6. Pour the egg mixture over the layers, then top with the cheeses.
