Chimichurri Shrimp

Ingredients

  • 1/2 cup fresh parsley, chopped
  • 1/4 cup olive oil
  • 3 tablespoons red wine vinegar
  • 4 cloves garlic, minced
  • 1 teaspoon red pepper flakes
  • Salt to taste

Instructions

  1. In a bowl, mix chopped parsley, olive oil, red wine vinegar, garlic, and red pepper flakes to create the chimichurri sauce.
  2. Add shrimp to the bowl and toss to coat.
  3. Let marinate for 30 minutes.
  4. Preheat grill to medium-high heat.
  5. Skewer shrimp and grill for 2-3 minutes on each side or until cooked through.
  6. Serve with additional chimichurri sauce on top.
