1 cup all-purpose flour
1/2 cup unsweetened cocoa powder
1 cup granulated sugar
1/2 teaspoon baking powder
1/2 teaspoon baking soda
1/4 teaspoon salt
1/2 cup buttermilk
1/2 cup brewed coffee
1/4 cup vegetable oil
2 large eggs
1 teaspoon vanilla extract
1 cup heavy cream
1/4 cup powdered sugar
Instructions
Preheat your oven to 350°F (175°C) and line a muffin tin with cupcake liners.
In a large bowl, combine flour, cocoa powder, sugar, baking powder, baking soda, and salt.
In another bowl, whisk together buttermilk, coffee, vegetable oil, eggs, and vanilla extract.
Pour the wet ingredients into the dry ingredients and mix until just combined.
Fill the cupcake liners 2/3 full and bake for 18-20 minutes or until a toothpick comes out clean.
Let the cupcakes cool completely.
In a separate bowl, whip the heavy cream and powdered sugar until soft peaks form.
Frost the cooled cupcakes with the whipped cream.
Notes
