  • 1/2 cup buttermilk
  • 1/4 cup unsalted butter, melted
  • 1 large egg
  • 1 teaspoon vanilla extract
  • 1/4 cup brown sugar, packed
  • 1 tablespoon ground cinnamon

Instructions

  1. Preheat the oven to 350°F (175°C) and line a muffin tin with paper liners.
  2. In a large bowl, whisk together flour, sugar, baking soda, salt, and cinnamon.
  3. In another bowl, combine buttermilk, melted butter, egg, and vanilla extract.
  4. Mix the wet ingredients into the dry ingredients until just combined.
  5. In a small bowl, mix brown sugar and ground cinnamon for the filling.
  6. Fill each muffin cup halfway with batter, add a spoonful of the cinnamon sugar mixture, and top with more batter.
  7. Bake for 18-20 minutes, or until a toothpick comes out clean.
  8. Allow to cool for a few minutes before serving.

Notes

  • For an extra gooey center, you can add cream cheese frosting on top after baking.
  • Store any leftovers in an airtight container for up to three days.
