Cinnamon Roll Muffins

  • 2 cups all-purpose flour
  • 1 cup granulated sugar
  • 2 tsp baking powder
  • 1/2 tsp baking soda
  • 1/2 tsp salt
  • 1/2 cup unsalted butter, melted
  • 1 cup buttermilk
  • 2 large eggs
  • 1 tbsp vanilla extract
  • 1 tbsp ground cinnamon
  • 1/2 cup brown sugar
  • 1/4 cup powdered sugar for icing

Instructions

  1. Preheat the oven to 350°F (175°C).
  2. In a large bowl, whisk together flour, sugar, baking powder, baking soda, and salt.
  3. In another bowl, combine melted butter, buttermilk, eggs, and vanilla extract.
  4. Slowly add the wet ingredients to the dry ingredients and mix until just combined.
  5. In a separate bowl, mix brown sugar and cinnamon for the filling.
  6. Fill muffin cups halfway with batter, sprinkle with cinnamon sugar, and then top with remaining batter.
  7. Bake for 18-20 minutes or until a toothpick comes out clean.
  8. Let cool slightly before drizzling with icing made of powdered sugar and a bit of water.

Notes

  • For an extra gooey texture, add some cream cheese to the batter.
  • These muffins are best enjoyed fresh.
