- 2 cups all-purpose flour
- 1 cup granulated sugar
- 2 tsp baking powder
- 1/2 tsp baking soda
- 1/2 tsp salt
- 1/2 cup unsalted butter, melted
- 1 cup buttermilk
- 2 large eggs
- 1 tbsp vanilla extract
- 1 tbsp ground cinnamon
- 1/2 cup brown sugar
- 1/4 cup powdered sugar for icing
- Preheat the oven to 350°F (175°C).
- In a large bowl, whisk together flour, sugar, baking powder, baking soda, and salt.
- In another bowl, combine melted butter, buttermilk, eggs, and vanilla extract.
- Slowly add the wet ingredients to the dry ingredients and mix until just combined.
- In a separate bowl, mix brown sugar and cinnamon for the filling.
- Fill muffin cups halfway with batter, sprinkle with cinnamon sugar, and then top with remaining batter.
- Bake for 18-20 minutes or until a toothpick comes out clean.
- Let cool slightly before drizzling with icing made of powdered sugar and a bit of water.
