  • 1 teaspoon ground cinnamon

  • 1/4 cup brown sugar (for swirl)

Instructions

  1. Preheat the oven to 350°F (175°C) and grease mini loaf pans.
  2. In a mixing bowl, combine pumpkin puree, granulated sugar, brown sugar, and oil until smooth.
  3. Add eggs one at a time, mixing well after each addition.
  4. In another bowl, whisk together flour, baking soda, baking powder, cinnamon, nutmeg, and salt.
  5. Gradually add dry ingredients to the wet mixture, stirring until just combined.
  6. In a small bowl, mix together 1/4 cup brown sugar and 1 teaspoon cinnamon for the swirl.
  7. Pour half the batter into the prepared pans, sprinkle with cinnamon-sugar mixture, and top with remaining batter.
  8. Swirl the batter with a knife to create a marbled effect.
  9. Bake for 25-30 minutes or until a toothpick comes out clean.
  10. Allow to cool before serving.
