An indulgent twist on the classic beef Wellington, featuring savory turkey bacon for enhanced flavor.

  • 1 pound beef tenderloin
  • 8 ounces turkey bacon
  • 2 tablespoons Dijon mustard
  • 1 pound mushrooms, finely chopped
  • 1 tablespoon olive oil
  • 1 egg, beaten
  • 1 package puff pastry
  • Salt and pepper to taste

Instructions

  1. Preheat the oven to 400°F (200°C).
  2. Season the beef tenderloin with salt and pepper, then sear it in a hot pan with olive oil until browned on all sides.
  3. Remove from heat and allow to cool, then brush with Dijon mustard.
  4. Cook the mushrooms in the same pan until all moisture is evaporated. Allow to cool.
  5. Wrap the beef in turkey bacon, then spread the mushroom mixture on top.
  6. Roll out the puff pastry and wrap it around the beef, sealing the edges.
  7. Brush the pastry with the beaten egg yolk.
  8. Bake for about 25-30 minutes or until the pastry is golden brown.
  9. Let it rest for 10 minutes before slicing and serving.

  • For extra flavor, add herbs like thyme or rosemary to the mushroom mixture.
