Coconut and Pineapple Cottage Cheese Muffins

  • 1 cup crushed pineapple, drained
  • 1/2 cup coconut flakes
  • 1 1/2 cups all-purpose flour
  • 1/2 cup sugar
  • 1 tablespoon baking powder
  • 1/2 teaspoon salt
  • 2 eggs
  • 1/4 cup vegetable oil
  • 1 teaspoon vanilla extract

Instructions

  1. Preheat your oven to 350°F (175°C) and grease a muffin tin.
  2. In a large bowl, mix together the cottage cheese, crushed pineapple, and coconut flakes.
  3. In another bowl, combine the flour, sugar, baking powder, and salt.
  4. In a separate small bowl, whisk the eggs, vegetable oil, and vanilla extract.
  5. Mix the wet ingredients into the dry ingredients until just combined.
  6. Fold in the cottage cheese mixture.
  7. Pour the batter into the prepared muffin tin, filling each cup about 2/3 full.
  8. Bake for 20-25 minutes or until a toothpick comes out clean.
  9. Allow to cool before serving.

Notes

  • For extra flavor, add a sprinkle of cinnamon to the batter.
