  • 1 teaspoon vanilla extract
  • 1 tablespoon lime zest
  • 1/2 cup butter, softened (for frosting)
  • 3 cups powdered sugar
  • 2 tablespoons lime juice
  • 1 teaspoon vanilla extract (for frosting)

Instructions

  1. Preheat the oven to 350°F (175°C) and line a cupcake pan with liners.
  2. In a large bowl, cream together the butter and sugar until light and fluffy.
  3. Add the eggs one at a time, mixing well after each addition.
  4. Stir in the coconut milk, vanilla extract, and lime zest.
  5. In a separate bowl, whisk together the flour, baking powder, and salt.
  6. Gradually add the dry ingredients to the wet mixture, stirring until just combined.
  7. Fold in the shredded coconut.
  8. Divide the batter evenly among the cupcake liners, filling each about 2/3 full.
  9. Bake for 18-20 minutes or until a toothpick inserted in the center comes out clean.
  10. Let the cupcakes cool completely before frosting.
  11. For the frosting, beat together the butter, powdered sugar, lime juice, and vanilla until smooth and creamy.
  12. Frost the cooled cupcakes generously with lime buttercream frosting.

Notes

  • Store any leftovers in an airtight container at room temperature.
  • For an extra kick, add more lime zest to the frosting.
