Cod & Potatoes in Rosemary Cream Sauce

Ingredients

  • 2 cod fillets
  • 3 medium potatoes
  • 1 cup heavy cream
  • 2 tablespoons olive oil
  • 2 cloves garlic, minced
  • 1 tablespoon fresh rosemary, chopped
  • Salt and pepper to taste

Instructions

  1. Preheat the oven to 375°F (190°C).
  2. Peel and slice the potatoes, then place them in a greased baking dish.
  3. In a saucepan, heat olive oil over medium heat and sauté garlic until fragrant.
  4. Add the heavy cream and rosemary, stir to combine, and season with salt and pepper.
  5. Pour the cream mixture over the potatoes in the baking dish.
  6. Top with cod fillets, season with additional salt and pepper.
  7. Bake for 25-30 minutes until the cod is cooked through and the potatoes are tender.
