Colorful Halloumi Pasta Salad

A vibrant and refreshing dish that combines the richness of halloumi with the crunch of fresh vegetables and the heartiness of pasta.

Ingredients

  • 200 grams halloumi cheese
  • 250 grams pasta (penne or fusilli)
  • 1 cup cherry tomatoes, halved
  • 1 cup cucumber, diced
  • 1/2 cup red bell pepper, diced
  • 1/2 cup black olives, sliced
  • 1/4 cup fresh parsley, chopped
  • 2 tablespoons olive oil
  • 1 tablespoon lemon juice
  • Salt to taste
  • Pepper to taste

Instructions

  1. Cook the pasta according to package instructions until al dente. Drain and set aside.
  2. In a large skillet, heat olive oil over medium heat. Add halloumi cheese and cook until golden brown on both sides, about 3-4 minutes. Remove from heat and slice.
  3. In a large bowl, combine cooked pasta, cherry tomatoes, cucumber, red bell pepper, black olives, and parsley.
  4. Add the sliced halloumi to the bowl.
  5. Drizzle with olive oil and lemon juice. Season with salt and pepper to taste. Toss gently to combine.
  6. Serve immediately or chill in the refrigerator for later.

Notes

  • Feel free to add or substitute other vegetables as desired.
  • This salad can be made ahead of time for a quick meal.
