Comforting Potato and Sausage Chowder

A comforting and hearty chowder filled with potatoes and sausage that warms the soul.

Ingredients

  • 4 cups diced potatoes
  • 1 pound sausage
  • 1 cup onion, chopped
  • 2 cups chicken broth
  • 1 cup heavy cream
  • 1 teaspoon garlic powder
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1 cup corn
  • 2 tablespoons fresh parsley, chopped

Instructions

  1. In a large pot, cook the sausage until browned.
  2. Add the onions and garlic powder, cooking until onions are translucent.
  3. Add the diced potatoes and chicken broth, and bring to a boil.
  4. Reduce heat and simmer until potatoes are tender.
  5. Stir in the heavy cream, corn, salt, and pepper.
  6. Cook for an additional 5 minutes, then stir in parsley before serving.

Notes

  • For a spicier chowder, use a spicy sausage.
  • Leftovers keep well in the refrigerator for up to 3 days.
