  • 1 cup cranberry sauce
  • 1/2 cup balsamic vinegar
  • 1 tablespoon Dijon mustard
  • 2 cloves garlic, minced
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1 tablespoon olive oil

Instructions

  1. Preheat the oven to 350°F (175°C).
  2. In a bowl, mix together the cranberry sauce, balsamic vinegar, Dijon mustard, garlic, salt, and pepper.
  3. Heat olive oil in a large skillet over medium-high heat. Sear the beef roast on all sides until browned.
  4. Place the roast in a roasting pan and pour the cranberry mixture over it.
  5. Cover with foil and roast in the preheated oven for 2 to 2.5 hours, or until the internal temperature reaches your desired doneness.
