  • 1 tablespoon baking powder
  • 1/2 teaspoon salt
  • 1 teaspoon orange zest
  • 1 cup fresh cranberries
  • 1/2 cup milk
  • 2 large eggs
  • 1/2 cup melted butter
  • 1/4 cup brown sugar
  • 1/4 cup oats
  • 1 teaspoon cinnamon

Instructions

  1. Preheat the oven to 375°F (190°C) and line a muffin tin with liners.
  2. In a large bowl, mix flour, sugar, baking powder, salt, and orange zest.
  3. Add cranberries, milk, eggs, and melted butter to dry ingredients and mix until just combined.
  4. In a separate bowl, combine brown sugar, oats, and cinnamon for the streusel topping.
  5. Scoop the muffin batter into the prepared tin, sprinkle the streusel on top.
  6. Bake for 18-20 minutes until a toothpick comes out clean.
  7. Allow to cool before serving.
