  • 1 cup turkey bacon, diced
  • 1 onion, chopped
  • 2 cloves garlic, minced
  • 4 cups vegetable broth
  • 1 cup heavy cream
  • 2 tablespoons flour
  • 2 tablespoons olive oil
  • Salt and pepper to taste

Instructions

  1. In a large pot, heat olive oil over medium heat. Add onion and garlic, cooking until softened.
  2. Add turkey bacon and cook until crispy.
  3. Stir in mushrooms and cook for 5 minutes.
  4. Sprinkle flour over mushroom mixture, stirring to combine.
  5. Gradually add vegetable broth, stirring constantly until the soup thickens.
  6. Lower the heat and stir in heavy cream. Season with salt and pepper.
  7. Simmer for 10 minutes before serving.
