Ingredients

  • 2 cups cooked shredded chicken
  • 1 cup sour cream
  • 1 cup shredded cheese
  • 1 can enchilada sauce
  • 8 corn tortillas
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • 2 tablespoons olive oil

Instructions

  1. Preheat the oven to 350°F (175°C).
  2. In a skillet, heat olive oil and add shredded chicken, garlic powder, and onion powder; cook until heated through.
  3. Warm tortillas in the microwave.
  4. Spread some enchilada sauce on the bottom of a baking dish.
  5. Fill each tortilla with the chicken mixture and a sprinkle of cheese, then roll up and place seam side down in the dish.
  6. Pour remaining enchilada sauce over the rolled tortillas and top with remaining cheese.
  7. Bake for 20-25 minutes until bubbly and golden.
