Creamy Chicken Pot Pie Orzo

  • 2 cups cooked orzo
  • 1 pound chicken breast, diced
  • 1 cup frozen peas and carrots
  • 1/2 cup celery, diced
  • 1/2 cup onion, diced
  • 3 cups chicken broth
  • 1 cup heavy cream
  • 2 tablespoons olive oil
  • 1 teaspoon garlic powder
  • 1 teaspoon thyme
  • Salt and pepper to taste

Instructions

  1. In a large pot, heat olive oil over medium heat. Add diced onion and celery, and sauté until soft.
  2. Add the diced chicken and cook until browned.
  3. Stir in the peas and carrots, then pour in the chicken broth and bring to a simmer.
  4. Reduce heat and stir in the heavy cream, garlic powder, thyme, salt, and pepper. Cook for a few minutes until the sauce thickens.
  5. Fold in the cooked orzo and mix until well combined.
