Creamy Garlic Baby Potatoes

  • 1 pound baby potatoes
  • 4 slices turkey bacon
  • 2 tablespoons olive oil
  • 3 cloves garlic, minced
  • 1 cup heavy cream
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1 teaspoon fresh parsley, chopped

Instructions

  1. Preheat the oven to 400°F (200°C).
  2. In a large pot, boil the baby potatoes until tender, about 15 minutes.
  3. While the potatoes are cooking, cook the turkey bacon in a skillet until crispy, then chop into pieces.
  4. Drain the potatoes and place them in a baking dish.
  5. In the same skillet, add olive oil and minced garlic, cooking until fragrant.
  6. Stir in the heavy cream and let it simmer for a few minutes.
  7. Add salt and pepper to the sauce, then pour it over the potatoes and mix well.
  8. Top with chopped turkey bacon and bake for 20 minutes.
  9. Garnish with fresh parsley before serving.
