- 1 pound ground beef
- 1 small onion, diced
- 2 cloves garlic, minced
- 1 can (28 ounces) crushed tomatoes
- 4 cups beef broth
- 1 teaspoon dried Italian seasoning
- 8 ounces lasagna noodles, broken
- 1 cup ricotta cheese
- 2 cups mozzarella cheese, shredded
- 1/2 cup grated Parmesan cheese
- 2 cups spinach, chopped
- Salt and pepper to taste
- In a large pot, brown the ground beef over medium heat. Drain any excess fat.
- Add onion and garlic, sauté until softened.
- Stir in crushed tomatoes, beef broth, and Italian seasoning.
- Bring to a boil, then add the broken lasagna noodles.
- Simmer until the noodles are tender, about 10 minutes.
- Stir in ricotta and half of the mozzarella cheese until melted.
- Add spinach, season with salt and pepper, and cook for an additional 2-3 minutes.
- Serve hot, topped with remaining mozzarella and Parmesan cheese.
