Creamy Lasagna Soup

A deliciously creamy and hearty lasagna soup that combines the classic flavors in an easy-to-make dish.

  • 1 pound ground beef
  • 1 small onion, diced
  • 2 cloves garlic, minced
  • 1 can (28 ounces) crushed tomatoes
  • 4 cups beef broth
  • 1 teaspoon dried Italian seasoning
  • 8 ounces lasagna noodles, broken
  • 1 cup ricotta cheese
  • 2 cups mozzarella cheese, shredded
  • 1/2 cup grated Parmesan cheese
  • 2 cups spinach, chopped
  • Salt and pepper to taste

Instructions

  1. In a large pot, brown the ground beef over medium heat. Drain any excess fat.
  2. Add onion and garlic, sauté until softened.
  3. Stir in crushed tomatoes, beef broth, and Italian seasoning.
  4. Bring to a boil, then add the broken lasagna noodles.
  5. Simmer until the noodles are tender, about 10 minutes.
  6. Stir in ricotta and half of the mozzarella cheese until melted.
  7. Add spinach, season with salt and pepper, and cook for an additional 2-3 minutes.
  8. Serve hot, topped with remaining mozzarella and Parmesan cheese.

Notes

  • For extra flavor, add red pepper flakes to the meat mixture.
  • Use more cheese for a creamier texture.
