2 cups vegetable broth
1 cup chopped carrots
1 cup chopped celery
1 cup diced potatoes
1 cup broccoli florets
1 cup heavy cream
1 tablespoon olive oil
1 teaspoon salt
1/2 teaspoon black pepper
1 teaspoon thyme
1/2 teaspoon garlic powder
Instructions
In a large pot, heat the olive oil over medium heat.
Add the carrots, celery, and potatoes. Cook for about 5 minutes until they start to soften.
Pour in the vegetable broth and bring to a boil.
Add the broccoli, salt, pepper, thyme, and garlic powder. Simmer for 15 minutes.
