Ingredients

1 pound ground turkey
4 slices turkey bacon
1 medium onion, diced
2 cloves garlic, minced
1 large green cabbage, chopped
4 cups vegetable broth
1 can (14.5 ounces) diced tomatoes
2 cups cauliflower rice
1 tablespoon Italian seasoning
Salt and pepper to taste
Instructions
In a skillet, cook turkey bacon until crispy. Remove and crumble.
In the same skillet, sauté onion and garlic until translucent.
In a crockpot, add ground turkey, sautéed onion and garlic, chopped cabbage, vegetable broth, diced tomatoes, cauliflower rice, Italian seasoning, and crumbled bacon.
Stir well and season with salt and pepper.
Cook on low for 6-8 hours or on high for 3-4 hours until cabbage is tender.
Serve hot, garnished with fresh herbs if desired.
Notes
This soup can be topped with cheese or sour cream for extra flavor.
Feel free to adjust the vegetables based on what you have on hand.
